Morels in cream sauce:

15-20 fresh morels cut lengthwise and finely sliced
2 Tablespoons of finely chopped chives
1 large clove of finely chopped garlic
2 TBS unsalted butter
2 TBS olive oil
3/4 cup chicken stock
1 cup heavy cream
salt & fresh ground pepper to taste 

Cleaning Morel mushrooms:

Rinse mushrooms under water washing out all dirt and place them in a bowl of salt water (about
2 Tablespoons of salt per half-gallon of water is sufficient).   Let them soak in the salt water over night.
This will continue to clean off any dirt that you may have missed.

Heat olive oil in pan over medium heat. Add garlic and chives, stir and sauté until softened. Add butter until melted and then add mushrooms.  Cook mushrooms stirring them until they start to brown, about 5 minutes.   Add chicken
stock and cook for 2-3 minutes. Add cream and cook on low until the sauce is reduced and thickened.  Serve with your favorite grilled steak.
